Ingredients list for Chocolate Jumbles with Caramel

  • ¼ cup Cocoa powder
  • 2¾ cups Refined flour (maida)
  • ½ cup brown sugar/jaggery
  • 60 grams Butter
  • 1 cup Golden syrup
  • 1 Egg
  • ½ teaspoon Soda bicarbonate
  • 1 teaspoon Cinnamon powder
  • 1 teaspoon Nutmeg powder
  • 2 teaspoons Dried ginger powder (soonth)

Method

  1. Heat together butter, brown sugar and ¾ cup golden syrup in a non-stick pan. Cook, stirring, for 4 minutes or till smooth. Transfer into a bowl and set aside for 10 minutes.
  2. Add egg. Sift together flour, cocoa powder, soda bicarbonate, cinnamon powder, nutmeg powder and ginger powder into the bowl. Mix till well combined into a dough.
  3. Transfer the dough on a worktop and knead till sticky. Wrap in a cling film and refrigerate for 30 minutes.
  4. Preheat oven to 180° C. Line a baking tray with butter paper.
  5. Divide the dough into 6 x 2 cm thick logs and place them on the lined tray. Place the tray in the preheated oven and bake for 15 minutes.
  6. Drizzle the remaining golden syrup over the logs and serve.
