Italian cuisine has developed through centuries of social and political changes, with roots stretching to antiquity.  Italian cuisine is simple and a number of dishes having only four to eight ingredients.  They rely mostly on the quality of ingredients rather than elaborate preparation.
Noteworthy changes in Italian cuisine happened with the discovery of the New World and the introduction of potatoes, tomatoes, bell peppers and maize, which are now an integral part of this cuisine.  Italian cuisine is known for its regional diversity each with a distinct taste.  This cuisine today is probably one of the most popular in the world.

Ingredients for Chilli Risotto Recipe

  • Fresh Red chillies 3

  • Arborio Rice 1 1/4 cups

  • French bread 1/2 loaf long

  • Extra virgin olive oil 8 tablespoons

  • Garlic chopped 15-20 cloves

  • Onion chopped 1 medium

  • Button mushrooms 6-8

  • Boneless chicken breast cut into 1/2 inch pieces 1

  • Salt to taste

  • Red chilli powder 1/2 teaspoon

  • Red chilli flakes 1/2 teaspoon

  • White wine 1 1/2 cups

  • Vegetable stock 2 cups

  • Cream 1/2 cup

  • Parmesan cheese 50 grams + for garnishing

Method

Step 1

Tear the French bread and set aside. Heat 3 tbsps extra virgin olive oil in a deep non stick pan. Add onion and half the garlic and sauté.

Step 2

Slice mushrooms and add, mix and continue to sauté. Heat the remaining oil in another non stick pan, add chicken and sauté.

Step 3

Add salt, ¼ tsp red chilli powder, ¼ tsp crushed red chillies, ¼ cup white wine and mix. Cook till done. Add rice to the first pan and sauté.

Step 4

Add the remaining white wine and let it get absorbed. Add stock and cook till it gets absorbed.

Step 5

Grind bread with remaining garlic, remaining red chilli powder, remaining crushed red chillies, fresh red chillies to make crumbs. Transfer this into a bowl and set aside.

Step 6

Heat the remaining oil in a third non stick pan. Add cream to the rice and mix. Slice parmesan cheese, add and mix well.

Step 7

Add bread crumbs to the third pan and toss. To serve put the risotto in two separate bowls.

Step 8

Put the chicken over the rice in one bowl. Over that put half the bread crumbs. Over the rice in the other bowl put only the bread crumbs.

Step 9

With a peeler peel some shavings of parmesan cheese and garnish both the bowls with it.

Step 10

Serve hot.
