It cannot be gainsaid that Chinese food is popular the world over and it can be adapted into our modern lifestyles as the strong link between diet and health of body, mind and spirit is epitomized in Chinese cookery. We all desire harmony in our lives and this works on the ancient Taoist principle of Yin and Yang in which balance and contrast are the key. Each Chinese dish reflects a balance of taste, texture, aroma and colour. Be it sweet, sour, pungent, hot, salty or spicy – all the six basic flavours are incorporated deftly in all Chinese dishes.

Ingredients for Chilli Garlic Crab Recipe

  • Crabs 2 large

  • Dried Red Chillies halved 3-4

  • Garlic crushed 14-16 cloves

  • Cornflour/ corn starch 2 tablespoons

  • Oil 4 tablespoons

  • Red chilli paste 2 tablespoons

  • Soy sauce 1 tablespoon

  • Sugar 1 teaspoon

  • MSG 1/4 teaspoon

  • Fish stock or chicken stock 1 1/2 cups

  • Black peppercorns crushed 1/2 teaspoon

  • Salt to taste

  • Dry sherry (optional) 2 tablespoons

  • Vinegar 1 tablespoon

  • Sesame oil (til oil) 2 tablespoons

  • Spring onion greens chopped 2 stalks

Method

Step 1

Separate the claws and cut the crab into four pieces each. Wash and remove gills and stomach sac from underside. Crack the claws lightly, wash thoroughly and drain well.

Step 2

Mix cornflour in half a cup of water. Heat oil in a wok or a pan, add garlic and red chillies and stir fry for a minute. Add red chilli paste, soy sauce, sugar, MSG and immediately add the crab pieces.

Step 3

Continue to stir fry for two to three minutes, stirring continuously. Stir in the stock and cook for two minutes or until the crabs are cooked. Stir in the cornflour mixture and cook for a minute or until the sauce starts to thicken.

Step 4

Add crushed peppercorns and salt and stir in dry sherry and vinegar. Drizzle sesame oil and serve hot, garnished the spring onion greens.
