Chilli Garlic Crab Delicious crabs cooked in a chilli and garlic sauce By Sanjeev Kapoor 05 May 2016 in Recipes Course New Update Main Ingredients Crabs, Dried Red Chillies Cuisine Chinese Course Main Course Seafood Prep Time 26-30 minutes Cook time 26-30 minutes Serve Taste Spicy Level of Cooking Moderate Others Non Veg Ingredients list for Chilli Garlic Crab 2 large Crabs 3-4 Dried Red Chillies halved 14-16 cloves Garlic crushed 2 tablespoons Cornflour/ corn starch 4 tablespoons Oil 2 tablespoons Red chilli paste 1 tablespoon Soy sauce 1 teaspoon Sugar 1/4 teaspoon MSG 1 1/2 cups Fish stock or chicken stock 1/2 teaspoon Black peppercorns crushed to taste Salt 2 tablespoons Dry sherry (optional) 1 tablespoon Vinegar 2 tablespoons Sesame oil (til oil) 2 stalks Spring onion greens chopped Method Separate the claws and cut the crab into four pieces each. Wash and remove gills and stomach sac from underside. Crack the claws lightly, wash thoroughly and drain well. Mix cornflour in half a cup of water. Heat oil in a wok or a pan, add garlic and red chillies and stir fry for a minute. Add red chilli paste, soy sauce, sugar, MSG and immediately add the crab pieces. Continue to stir fry for two to three minutes, stirring continuously. Stir in the stock and cook for two minutes or until the crabs are cooked. Stir in the cornflour mixture and cook for a minute or until the sauce starts to thicken. Add crushed peppercorns and salt and stir in dry sherry and vinegar. Drizzle sesame oil and serve hot, garnished the spring onion greens.
