Ingredients list for Chicken With Ginger

  • 800 grams Boneless Chicken 1/2 inch pieces
  • 1 tablespoon Ginger chopped
  • 4-6 Chinese black mushrooms
  • 1 tablespoon Oil
  • 1 small Onion chopped
  • 3 cloves Garlic chopped
  • 1 tablespoon Soy sauce
  • 2 sprigs Fresh mint leaves
  • 2 Spring onions 1 inch pieces
  • 1 Fresh red chillies sliced
  • 1 tablespoon Rice vinegar
  • 1/2 teaspoon Sugar
  • 2 tablespoon Fish sauce

  1. Soak Chinese mushroom in warm water, remove stems and then slice them. Heat oil, add sliced onion and sauté until transluscent. Add chopped garlic and sauté for one minute. Remove onion and garlic from the oil and keep aside.
  2. Add chicken pieces in same oil and sauté for two to three minutes till lightly browned. Add soy sauce, chopped ginger and one sprig mint leaves. Stir well. Add mushroom, spring onion, sliced fresh chilli, sautéed onion and garlic and cook stirring continuously until chicken is tender. When chicken is almost cooked, stir in rice vinegar, sugar and fish sauce.
  3. Garnish with remaining mint leaves and serve hot preferably with rice.
  4. Serve chicken with warm lemon olive mixture.
