Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken With Ginger Recipe

  • Boneless Chicken 1/2 inch pieces 800 grams

  • Ginger chopped 1 tablespoon

  • Chinese black mushrooms 4-6

  • Oil 1 tablespoon

  • Onion chopped 1 small

  • Garlic chopped 3 cloves

  • Soy sauce 1 tablespoon

  • Fresh mint leaves 2 sprigs

  • Spring onions 1 inch pieces 2

  • Fresh red chillies sliced 1

  • Rice vinegar 1 tablespoon

  • Sugar 1/2 teaspoon

  • Fish sauce 2 tablespoon

Method

Step 1

Soak Chinese mushroom in warm water, remove stems and then slice them. Heat oil, add sliced onion and sauté until transluscent. Add chopped garlic and sauté for one minute. Remove onion and garlic from the oil and keep aside.

Step 2

Add chicken pieces in same oil and sauté for two to three minutes till lightly browned. Add soy sauce, chopped ginger and one sprig mint leaves. Stir well. Add mushroom, spring onion, sliced fresh chilli, sautéed onion and garlic and cook stirring continuously until chicken is tender. When chicken is almost cooked, stir in rice vinegar, sugar and fish sauce.

Step 3

Garnish with remaining mint leaves and serve hot preferably with rice.

Step 4

Serve chicken with warm lemon olive mixture.
