Ingredients list for Chicken Vol-au-vent

  • 150 grams Boneless chicken breasts cut into small cubes
  • 12-16 Vol-au-vent puff pastries
  • 1 teaspoon Oil
  • 8-10 Garlic cloves chopped
  • 1 teaspoon Red chilli flakes
  • 1/4 teaspoon Crushed black peppercorns
  • to taste Salt
  • 5-6 fresh thyme sprigs
  • 8-9 Basil leaves chopped
  • 2 tablespoons Cream cheese
  • for garnishing Parsley sprigs

Method

  1. Heat oil in a non-stick pan. Add garlic and sauté for 1 minute.
  2. Add chicken cubes and sauté.
  3. Add red chilli flakes, crushed peppercorns, salt, thyme and basil. Toss well and cook till the chicken is done. Switch off heat, transfer in a bowl and cool to room temperature.
  4. Add cream cheese and mix well. Stuff this mixture into the vol-au-vent puff pastries.
  5. Garnish with parsley sprigs and serve immediately.
