Ingredients list for Chicken Pulao With Yogurt

  • 1 1/2 cups Basmati soaked
  • 600 grams Boneless chicken cut into cubes
  • 1/2 cup Yogurt
  • 2 tablespoons Ginger paste
  • 2 tablespoons Garlic paste
  • to taste Salt
  • 4 tablespoons Pure ghee
  • 1 teaspoon Cumin seeds
  • 6-8 Cloves
  • 6-8 Green cardamoms
  • 1 inch stick Cinnamon
  • 2 Bay leaves
  • 2 medium Onions sliced
  • 3 medium Tomatoes
  • 1 teaspoon Red chilli powder
  • 3 1/2 cups Chicken stock

  1. Marinate the chicken in yogurt, ginger and garlic pastes and salt for an hour. Heat ghee in a thick-bottomed pan.
  2. Add cumin seeds and sauté till they change colour. Add cloves, green cardamoms, cinnamon and bay leaves.
  3. Sauté it for few seconds. Add onions and sauté till golden brown. Add tomatoes and cook on high heat for three minutes, stirring continuously.
  4. Mix in red chilli powder. Add chicken along with the marinade and sauté till the chicken is half cooked.
  5. Add chicken stock and bring to a boil. Stir in drained rice and bring it to a boil and then lower the heat.
  6. Cook till the water level reaches the rice level. Cover the rice with a lid and cook on low heat for twenty minutes or till rice and chicken are fully cooked.
  7. Remove the lid and separate the rice granules so that rice does not form lumps. Serve along with raita and kachumber.
