Ingredients list for Chicken Meatball Pulav

  • 200 grams Chicken mince
  • 1½ cups Basmati rice soaked and drained
  • 3 tablespoons Ghee
  • 1 teaspoon Cumin seeds
  • 4-5 Cloves
  • 4-5 Green cardamoms
  • 2 Bay leaves
  • 2 medium Onions sliced
  • 2 cups Chicken stock
  • to taste Salt
  • 1 tablespoon Ginger finely chopped
  • 1 tablespoon Garlic finely chopped
  • 2 teaspoons Garam masala powder
  • 2 tablespoons Fresh coriander leaves finely chopped
  • ½ cup Fresh mint leaves finely chopped
  • 2-3 Green chillies finely chopped
  • to deep fry Oil
  • 1 Egg
  • 1 cup Fried onions

Method

  1. Heat ghee in a deep non-stick pan, add cumin seeds, cloves, green cardamoms and bay leaves and sauté for a minute. Add onions and sauté till lightly browned.
  2. Add some of the garlic and ginger and sauté well. Add1 teaspoon garam masala powder and rice and mix well. Add chicken stock and salt and mix well. Cover and cook till the rice is done.
  3. Grind chicken, remaining garlic, ginger, coriander leaves, mint leaves, fried onions, green chillies, salt and the remaining garam masala powder to a fine paste. Transfer this on a plate, dampen your palms in water and shape them into balls.
  4. Heat sufficient oil in a kadai.
  5. Break egg in a bowl, add salt and whisk well. Dip meatballs in it and deep-fry them in hot oil till golden and crisp on all the sides. Drain them on absorbent paper.
  6. Add the fried meatballs to the rice and mix well. Add fried onions. Cover and cook for 2 minutes.
