Chicken Fajita

Marinated boneless chicken cooked, wrapped in tortillas with caramelized onion, capsicum, cheese, rolled and served with sour cream and guacamole. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Chicken Fajita

  • 300 grams Boneless chicken cut into cubes
  • 4 Tortillas
  • to taste Salt
  • 1 teaspoon Paprika powder
  • 1 tablespoon Fajita spice mix
  • 1 tablespoon Butter
  • 1 tablespoon Garlic crushed
  • 2 tablespoons Fresh coriander leaves chopped
  • 1 teaspoon Vinegar
  • 1 tablespoon Jalapenos chopped
  • a few Lettuce leaves
  • 1 Tomato chopped
  • 2 stalks Spring onion greens chopped
  • 2 medium Onions cut into roundels and caramelized
  • 1 medium Green capsicum cut into roundels and caramelized
  • 2 tablespoons Processed cheese grated
  • as required Sour cream
  • as required Guacamole

Method

  1. Put chicken with salt, paprika powder and fajita spice mix into a bowl and mix well. Set aside to marinate.
  2. Heat butter in a non-stick pan. Add garlic and sauté till well browned.
  3. Add marinated chicken and mix. Add very little water, mix well, cover and cook on low heat for 5 minutes.
  4. Add coriander leaves, vinegar and jalapenos. Mix well and remove from heat.
  5. Heat a non-stick tawa. Place tortillas on it and heat from both sides.
  6. Place each heated tortilla on a worktop. Place a spoonful of chicken mixture in the centre of each. Top with torn lettuce leaves, tomato, spring onion greens, caramelized onions, caramelized capsicum and grated cheese on top. Bring the edges together to make a wrap and secure with a toothpick.
  7. Serve immediately with sour cream and guacamole.
