Cheesy Pesto and Egg Melts These three cheese and egg sandwiches are very filling and ideal for a Sunday brunch. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 16 Feb 2017 in Recipes Course New Update Main Ingredients Mozzarella cheese, Processed cheese Cuisine Fusion Course Snacks and Starters Prep Time 21-25 minutes Cook time 6-10 minutes Serve 4 Taste Mild Level of Cooking Easy Others Non Veg Ingredients list for Cheesy Pesto and Egg Melts for garnish Mozzarella cheese grated, 4 tablespoons + 4 tablespoons Processed cheese grated 2 tablespoons Parmesan cheese grated 1 tablespoon Pesto sauce 8 Eggs bolied 8 White bread slices to taste Crushed black peppercorns a pinch Salt as required Butter Method Grate eggs into a bowl. Add pesto sauce, 3 tablespoons mozzarella cheese, crushed peppercorns, salt, processed cheese and Parmesan cheese and mix well. Apply butter on 4 bread slices. Top with a generous portion of egg-cheese mixture, sprinkle remaining mozzarella cheese on top and cover with remaining 4 bread slices. Spread some more butter on top. Heat a non-stick sandwich grilling machine. Place the sandwiches on it, cover and grill till grill marks appear on both sides and the cheese melts.
