Ingredients list for Chatpata Fried Chicken

  • 8 Chicken wings with skin
  • Juice of 1 lemon
  • for deep-frying Oil ½ tablespoon +
  • for garnishing Fresh coriander leaves chopped, 1 tablespoon +
  • 1 tablespoon Fresh mint leaves chopped
  • 1 Chicken stock cubes crushed
  • ½ teaspoon Red chilli powder
  • to taste Salt
  • 1 tablespoon Garlic chopped
  • ½ tablespoon Ginger chopped
  • 5 tablespoons Refined flour (maida) 1 cup +
  • ½ cup Corn flakes
  • for garnishing Masala peanuts ¼ cup +
  • 2 Eggs
  • Chatpata spice powder
  • 2 teaspoons Chaat masala
  • 1 teaspoon Dried mint powder
  • 1 teaspoon Red chilli powder
  • ¼ teaspoon Citric acid
  • to taste Salt

Method

  1. Put lemon juice, ½ tablespoon oil, 1 tablespoon coriander leaves, mint leaves, crushed stock cube, red chilli powder, salt, garlic and ginger in a bowl and mix well.
  2. Add chicken wings and mix well. Set aside to marinate for 15-20 minutes.
  3. To make chatpata spice powder, put dried mint powder, chaat masala, red chilli powder, citric acid and salt in a blender jar and blend well. Transfer into a bowl and set aside.
  4. Put 1 cup refined flour and salt in another bowl. Coat marinated chicken wings in this flour mixture.
  5. Crush cornflakes and place in a third bowl. Crush ¼ cup masala peanuts with a rolling pin and add. Mix well. Add 4 tablespoons refined flour and mix well.
  6. Break eggs into the bowl in which the marination was prepared. Add 1 tablespoon refined flour and whisk well.
  7. Heat sufficient oil in a kadai.
  8. Dip the flour coated marinated chicken wings in the egg mixture and coat evenly in the cornflakes-flour mixture. Press lightly and dust off the excess mixture.
  9. Deep-fry the chicken wings in medium hot oil till golden and crisp. Drain on absorbent paper.
  10. Sprinkle chatpata spice powder on top and serve hot garnished with masala peanuts and coriander leaves.
