Ingredients list for Cauliflower and Pear Muffins

  • 1/2 medium Cauliflower finely chopped
  • 1 1/2 medium Pears peeled and finely chopped
  • 1 cup + ½ tablespoon Butter
  • 1/4 cup brown sugar/jaggery
  • 1 cup Castor sugar (caster sugar)
  • 4 Eggs
  • 1 teaspoon Vanilla essence
  • 1 cup Refined flour (maida)
  • 1 teaspoon Baking powder
  • 1 teaspoon Green cardamom powder

Method

  1. Preheat oven to 180ºC.
  2. Heat half tablespoon butter in a non-stick pan, add pears and cauliflower, mix well and cook for five to ten minutes.
  3. Add brown sugar, mix and cook till the sugar melts. Remove from heat and set aside to cool.
  4. Cream together one cup butter and castor sugar in a bowl till light and fluffy. Add eggs, one at a time, and vanilla essence and beat well.
  5. Sieve together refined flour, baking powder and cardamom powder into the butter-sugar mixture and fold till well combined.
  6. Divide the batter equally into silicon muffin moulds, place the moulds in the preheated oven and bake for twenty-five to thirty minutes. Remove from oven and cool.
  7. Remove from moulds and serve.
