Ingredients list for Carrot and Apricot Sabzi

  • 2 medium Carrots
  • 8-10 Golden apricots
  • 1 inch pie Ginger
  • 1 tablespoon Butter
  • 10-12 Shallots
  • to taste Salt
  • a little Nutmeg powder
  • 1/2 teaspoons Red chilli flakes
  • 1/2 Lemon

Method

  1. Slice carrots into roundels. Slice ginger and chop golden apricots.
  2. Heat butter in a non stick pan, add shallots, ginger, carrot and apricots and mix.
  3. Add salt and ¼ cup water and mix. Cook till carrot gets cooked.
  4. Grate a little nutmeg into the pan and mix. Cook till the water is absorbed.
  5. Add crushed red chillies and mix. Squeeze the juice of ½ lemon and add.
  6. Mix well and serve hot.
