How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Caribbean Rice Recipe

  • Rice soaked 2 cups

  • Coconut scraped 1 cup

  • Orange juice 1/3 cup

  • Fresh coriander leaves finely chopped 1/4 cup

  • Butter 3 tablespoons

  • Cumin seeds 1 teaspoon

  • Bay leaves 2-3

  • Green chillies slit 2-3

  • Ginger chopped 1 inch piece

  • Salt to taste

  • Orange peeled and segments separated 1

Method

Step 1

Boil four cups of water in a deep pan. Add the soaked rice and cook till three fourth done. Drain the water and allow the rice to cool.

Step 2

In a bowl mix the cooked rice with orange juice, coconut and coriander leaves. Heat butter in a kadai and add cumin seeds.

Step 3

When they begin to change colour, add bay leaves, green chillies and ginger and sauté for a minute. Add rice and salt and sauté for three-four minutes. Serve hot garnished with orange segments.
