Caldo Verde Soup

Ingredients list for Caldo Verde Soup

  • 1 Onion roughly chopped
  • 1 tablespoon Garlic minced
  • 2 Potatoes peeled and cut into dices
  • 2 tablespoons Olive oil
  • 2 Sausages cut into roundels
  • 1 cup Spinach shredded
  • to taste Salt
  • to taste Black pepper powder

Method

  1. Heat 1 tablespoon oil in a deep non-stick pan. Add garlic and sauté for a minute.
  2. Add onion and sauté till translucent.
  3. Add potatoes, mix well and cook on high heat for a minute.
  4. Add 4-5 cups water, stir to mix, cover and boil for 15 minutes.
  5. Heat remaining oil in another non-stick pan. Add sausage and shallow-fry till crisp. Drain on absorbent paper and set aside.
  6. Transfer cooked mixture in a bowl and blend with a hand blender.
  7. Transfer the blended mixture back into the pan, add little water and bring it to a boil.
  8. Add spinach and stir to mix. Add salt, pepper powder, mix well and cook for a minute.
  9. Add fried sausages and stir to mix. Pour into individual soup bowls and serve piping hot.
