Ingredients list for Burritos With Chicken And Rice

  • 8 Fresh Flour Tortilla
  • 2 Basmati Rice
  • 1/2 cup Basmati rice soaked
  • 1 tablespoon Oil
  • 1 medium Onion chopped
  • 1/2 teaspoon Clove powder
  • 1/2 teaspoon Dried oregano
  • 4 large Tomatoes chopped
  • 1 1/4 cups Cheddar cheese grated
  • to taste Salt
  • to garnish Fresh oregano chopped

Method

  1. Boil plenty of water in a deep pan. Add rice and cook till done, ensuring that the grains remain firm and separate. Drain and set aside.
  2. Heat oil in a pan, add onion, clove powder and dried oregano and sauté for two to three minutes.
  3. Stir in tomatoes and cook till the tomatoes turn pulpy. Stir in rice and salt, mix well and then set the mixture aside .
  4. Boil the chicken breasts in salted water till done.
  5. Drain and shred. Add the shredded chicken and cheese to the rice and mix .
  6. Heat the tortillas and put the filling in the center of each tortilla.
  7. Fold the tortillas in the form of a parcel. Serve hot garnished with fresh oregano.
