Brownie Cupcakes

Ingredients list for Brownie Cupcakes

  • 100 grams Cocoa powder
  • 220 grams Refined flour (maida)
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 240 grams Butter
  • 400 grams Condensed milk
  • 1 1/2 teaspoons Vanilla essence
  • ½ cup + for garnishing Walnuts chopped
  • ½ cup + for garnishing Chocolate chips
  • 3/4 cup Buttermilk

Method

  1. Preheat oven at 180°C.
  2. Sift together refined flour, cocoa powder, baking soda and baking powder into a bowl and mix well. Set aside.
  3. Cream together butter and condensed milk in another bowl with an electric beater till light. Add vanilla essence and beat well.
  4. Add walnuts and chocolate chips to the flour mixture and mix well.
  5. Add the flour mixture to the butter-condensed milk mixture and fold till well blended. Add buttermilk and mix well.
  6. Put the batter into a piping bag and pipe out into individual silicon cupcake moulds. Garnish with chopped walnuts and chocolate chips.
  7. Place the moulds on a baking tray and put in the preheated oven. Bake for 30 minutes.
  8. Remove from oven, cool and demould. Serve warm.
