Ever wondered why the phrase “say cheese” is used just before a photograph is clicked? Simply because ‘cheese’ makes one smile! Not only the word but cheese as a food makes a lot of palates happy. It is an inexpensive, versatile and nourishing food. We have our very own Indian version as well as the ones made from soy milk that are even healthier. Whichever form, this is one food that is loved by one and all!

Ingredients for Breakfast Bread Cheese Balls Recipe

  • Mozzarella cheese grated ½ cup

  • White bread slices 4

  • Processed cheese grated ½ cup

  • Fresh coriander leaves finely chopped, 2 teaspoons + 1 tablespoon

  • Green chilli finely chopped 1 teaspoon

  • Crushed black peppercorns 1 teaspoon

  • Garlic finely chopped ½ teaspoon

  • Onion finely chopped 5 teaspoons

  • Potatoes boiled, peeled and mashed 2-3 medium

  • Salt to taste

  • Oil to deep fry

  • Bread crumbs 1 cup

  • Juice of 1 lemon

  • Cherry tomatoes halved 8-9

  • Lettuce leaves a few

  • Olive oil 1 tablespoon

Method

Step 1

Put mozzarella cheese, processed cheese, 2 teaspoons coriander leaves, green chillies, crushed peppercorns, garlic and onion in a bowl and mix well.

Step 2

Divide the mixture into equal portions, shape them into small balls and refrigerate for 10-15 minutes.

Step 3

Take bread slices in a bowl and add water to it. Soak them for a while and squeeze out the water and place in another bowl. Mash them.

Step 4

Add potatoes and mix well. Add 1 tablespoon coriander leaves, salt and mix well.

Step 5

Heat sufficient oil in a kadai.

Step 6

Divide the bread-potato mixture into equal portions. Make a dent in them and place the cheese balls in them. Shape them again into larger balls.

Step 7

Spread breadcrumbs on a plate. Coat the balls in it, dust off the excess and deep-fry in hot oil till golden and crisp. Drain on absorbent paper.

Step 8

Combine lemon juice, cherry tomatoes, some lettuce leaves, olive oil and salt in a bowl. Toss well.

Step 9

Place the lettuce salad on a serving dish. Halve the fried cheese balls and put them on the dish. Serve immediately.
