Ingredients list for Beetroot Soup

  • 3 medium Beetroots, thinly sliced
  • 2 tablespoons Oil
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 medium Potato
  • 2 medium Carrots
  • to taste Salt
  • 1/2 teaspoon Black pepper powder
  • 1 large Tomato
  • 1 tablespoon Fresh cream

Method

  1. Heat oil in a deep non-stick pan. Roughly chop onion and garlic. Add to the pan and sauté.
  2. Thinly slice potato and carrots and add. Add salt, black pepper powder and stir.
  3. Cover and cook for 2-3 minutes. Add beetroots and 2 cups water, cover and cook till the vegetables are almost done.
  4. Chop tomato and add. Cook for 10 minutes. Strain the vegetables.
  5. Allow to cool. Blend into a smooth puree adding a little cold water.
  6. Transfer puree back into the pan, add the strained cooking liquor and mix well.
  7. Heat the soup till it comes to a boil. Pour into a soup plate, garnish with cream and serve hot.
