Bean Sprout And Fruit Salad

Awesome combination of sprouts and fruits with a balsamic dressing.Put all the above in a salad bowl. Add lettuce leaves, baby tomatoes and bean sprouts. Prepare the dressing by mixing together olive oil, vinegar, salt, peppercorns and fresh orange juice. Just before serving, add the dressing to the bean sprouts and fruit mixture. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Bean Sprout And Fruit Salad

  • 1 cup Bean sprouts
  • 2 Oranges
  • 6 Apricots
  • 2 slices Pineapple cubed
  • 1 Ripe mango cubed
  • 1 Apple cubed
  • 1 Peach cubed
  • 6 leaves Lettuce shredded
  • 8 Cherry tomatoes halved
  • 4 tablespoons Olive oil
  • 1 tablespoon Balsamic vinegar
  • to taste Salt
  • 2 tablespoons Fresh orange juice
  • 1/2 teaspoon Black peppercorns freshly ground

  1. Peel oranges, separate the segments, remove the pips and cut into cubes. Soak apricot in warm water for few hours, if dry or else wash and use as such.
  2. Put bean sprouts, oranges, apricots, pineapple, mango, apple and peach in a salad bowl.
  3. Add shredded lettuce leaves, baby tomatoes and bean sprouts. Prepare the dressing by mixing together olive oil, balsamic vinegar, salt, black peppercorns and fresh orange juice.
  4. Mix well and chill till required. Just before serving add the dressing to bean sprouts and fruit mixture and serve.
