Ingredients list for Banana Coconut Loaf

  • 3 large Ripe bananas peeled and mashed
  • 2 cups Desiccated coconut
  • ½ cup + for greasing Butter
  • ½ cup Honey
  • 1 cup + for dusting Refined flour (maida)
  • 1 teaspoon Baking powder
  • 4 Eggs
  • Zest of 2 lemons
  • to taste Salt

Method

  1. Preheat oven to 180°C. Grease a loaf tin with some butter and dust with some flour.
  2. Heat a non-stick pan. Add honey and butter, mix and let the butter melt. Transfer into a bowl.
  3. Add bananas, desiccated coconut, flour, baking powder, melted honey-butter mixture, eggs, lemon zest and salt and mix till well combined.
  4. Pour the prepared mixture into the lined tin, place the tin in the preheated oven and bake for 1 hour. Remove from oven, cool and demould.
  5. Slice and serve.
