Baked Dish

Ingredients list for Baked Dish

  • 5 medium Green Capsicum
  • 2 cloves Garlic
  • 2 Spring onions
  • 1 cup Corn kernels
  • 4 medium Tomatoes
  • 3 tablespoons Butter
  • 1 tablespoon Refined flour (maida)
  • 1 tablespoon Whole wheat flour (atta)
  • 1 1/2 cups Milk
  • a pinch Nutmeg grated
  • to taste Salt
  • 2 tablespoons Oil
  • to taste Black peppercorns ground
  • 1/2 cup Cheese grated
  • 1/3 cup Cream

  1. Wash and pat dry capsicums. Roast three of them till their skins get charred. Remove and pour water over them. Peel off charred skin and puree the capsicums. Keep aside.
  2. Halve, de-seed and dice the remaining capsicums. Peel, wash and chop garlic. Wash, trim and chop spring onions. Keep some greens aside. Boil corn. Wash and chop two tomatoes. Blanch the remaining two tomatoes in hot water for two minutes. Drain, peel, deseed and chop roughly.
  3. Heat two tablespoons butter in a thick bottomed pan on low heat. Add refined flour and wheat flour. Stir for two minutes, add milk and stir continuously to avoid lumps. When the sauce comes to a boil, add grated nutmeg and salt and stir. Remove when the sauce thickens. Keep the sauce warm. Preheat oven to 180ºC. In another pan heat one tablespoon of oil and the remaining butter.
  4. Add garlic, spring onions and sauté till it starts to change colour. Add corn and stir. Add tomatoes, salt and freshly ground peppercorns and stir to mix well. Add capsicum dices and tomato concasse.
  5. Transfer into a baking dish. In the same pan in which the sauce was cooked heat the remaining oil, add capsicum puree and white sauce. Cook for a while. Add half of the grated cheese and cream and mix well. Adjust seasoning and transfer the sauce into the baking dish.
  6. Sprinkle remaining grated cheese, chopped spring onion greens and bake in a preheated oven at 180ºC till the cheese layer is golden in colour and the sauce is bubbling hot.
