Baingan Tikki With Masala Gravy By Sanjeev Kapoor 22 Dec 2014 in Recipes Course New Update Main Ingredients Brinjal, gram flour Cuisine Fusion Course Main Course-Veg Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Select Taste Level of Cooking Medium Others Veg Ingredients list for Baingan Tikki With Masala Gravy 1 large Brinjal sliced 1 cup gram flour 1/2 teaspoon Carom seeds to taste Salt to deep fry Oil For Gravy 4 tablespoons Oil 1 teaspoon Cumin seeds 2 medium Onions chopped 2 teaspoons Ginger-garlic paste 1 teaspoon Chilli powder 2 teaspoons Coriander powder 1/4 teaspoon Turmeric powder 1 cup Fresh tomato puree a pinch Sugar to taste Salt 3 tablespoons Fresh cream 2 tablespoons Fresh coriander chopped Method In a mixing bowl, add gram flour, carom seeds, salt. Add sufficient water and mix well till smooth. Heat sufficient oil in a kadai. Dip the sliced brinjal in the gram flour batter and fry them till golden brown. Drain them on an absorbent paper and keep aside. For gravy, heat oil in a non-stick pan. Add cumin seeds. Once they start to change the colour, add onion and sauté till it turns golden brown. Add the ginger-garlic paste, chilli powder, coriander powder, turmeric powder and 1 cup of water. Lower the heat and cook for 4-5 minutes. Add tomato puree and cook till oil is separated. Add fried brinjals, sugar, salt, mix well and let it cook for 3-4 minutes on low flame. Add the fresh cream and mix well.
