Take a cookie cutter of the diameter of the brinjal roundels and cut out a cylinder from the cheese block and further cut the cylinder into roundels. Sprinkle salt on brinjal roundels. Take gram flour, salt, refined flour, turmeric powder, ginger-garlic paste, red chilli sauce and 2 tablespoons sev in a bowl. Add water as required and mix well into a thick smooth batter. Heat sufficient oil in a kadai. Add remaining sev in the batter and mix well. Place a cheese roundel between two brinjal roundels to make a sandwich. Use up all the brinjal roundels and cheese roundels to make more sandwiches. Dip each sandwich in the batter and deep-fry in hot oil till golden and crisp. Drain on absorbent paper. Garnish with ginger strips and spring onion green strips and serve hot.
