Ingredients list for Baingan Canapes

  • 1 medium Eggplant cut into small cubes
  • 16 small Biscuits
  • 2 tablespoons Oil
  • 1 medium Onion finely chopped
  • 1 Green chilli finely chopped
  • 1/2 teaspoon Red chilli powder
  • 1/2 teaspoon Garam masala powder
  • 1/4 teaspoon Turmeric powder
  • to taste Salt
  • 1 medium Tomato finely chopped
  • 1 tablespoon Fresh coriander leaves chopped
  • for garnish Fresh coriander

Method

  1. Heat oil in a non-stick pan, add onion and green chilli and sauté on medium heat till the onion turns a light golden.
  2. Add red chilli powder, garam masala powder, turmeric powder and salt. Mix well and add tomatoes. Mix well and cook till soft.
  3. Add eggplant and mix well. Cook for five minutes on medium heat, stirring occasionally. Add coriander leaves and mix. Remove from heat.
  4. Arrange the biscuits on a serving platter, put a little eggplant mixture on each of them. Garnish with coriander sprigs and serve.
