By Sanjeev Kapoor 04 May 2016 in Recipes Course New Update Main Ingredients Eggplant, Biscuits Cuisine Indian Course Snacks and Starters Prep Time 16-20 minutes Cook time 21-25 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Baingan Canapes 1 medium Eggplant cut into small cubes 16 small Biscuits 2 tablespoons Oil 1 medium Onion finely chopped 1 Green chilli finely chopped 1/2 teaspoon Red chilli powder 1/2 teaspoon Garam masala powder 1/4 teaspoon Turmeric powder to taste Salt 1 medium Tomato finely chopped 1 tablespoon Fresh coriander leaves chopped for garnish Fresh coriander Method Heat oil in a non-stick pan, add onion and green chilli and sauté on medium heat till the onion turns a light golden. Add red chilli powder, garam masala powder, turmeric powder and salt. Mix well and add tomatoes. Mix well and cook till soft. Add eggplant and mix well. Cook for five minutes on medium heat, stirring occasionally. Add coriander leaves and mix. Remove from heat. Arrange the biscuits on a serving platter, put a little eggplant mixture on each of them. Garnish with coriander sprigs and serve.
