Ingredients list for Assorted Vegetable Rice

  • 1 cup Rice soaked and boiled
  • 5-6 French Beans finely chopped
  • 2 medium Carrots finely chopped
  • 6-7 Button mushroom diced
  • 5-6 Babycorns finely chopped
  • 1 long Brinjal cut into cubes and deep fried.
  • 1 tablespoon Garlic chopped
  • 2 tablespoons Oil
  • 1 teaspoon Soy sauce
  • to taste Salt
  • 1 tablespoon Five spice powder
  • 1 stalk Spring onion greens finely chopped

Method

  1. Heat oil in a deep non-stick pan. Add the garlic and sauté for two minutes.
  2. Add the beans and carrots, mix well and sauté for three to four minutes.
  3. Add the mushrooms and baby corns, mix well and cook till dry.
  4. Add the brinjals and cook till all the vegetables are done.
  5. Add the boiled rice, five-spice powder, soy sauce and salt and mix well.
  6. Serve hot garnished with spring onion greens.
