Ingredients list for Apricot Upside Down Pudding

  • 200 grams Golden apricots dried
  • 1 cup Whole wheat flour (atta) for dusting
  • 125 grams Butter
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon powder
  • 125 grams Brown sugar
  • 1 Egg broken
  • 3 tablespoons Milk
  • 4 tablespoons Honey
  • 200 grams Canned peaches chopped

Method

  1. Preheat oven to 180°C. Grease an aluminium cake tin with little butter and dust with a little flour.
  2. Sift together flour, baking powder and cinnamon powder into a bowl.
  3. Cream butter and brown sugar in another bowl till light and fluffy.
  4. Add egg and keep beating. Add sifted ingredients and mix well. Add milk and mix again.
  5. Pour honey in the prepared tin and spread it all over.
  6. Mix apricots and peaches in a bowl and mix well. Transfer this over the honey in the tin and spread evenly.
  7. Pour batter over the fruits and spread evenly. Pat the tin lightly.
  8. Place it in the preheated oven and bake for 30-40 minutes.
  9. Remove from oven. Turn upside down on a plate, slice and serve.
