Ingredients list for Aloo Anardana

  • 4 medium Potatoes
  • 1-2 cup Dried Pomegranate Seeds
  • 1-4 cup Butter
  • 1/4 teaspoon Turmeric powder
  • 1/2 tablespoon Coriander powder
  • 3/4 teaspoon Cumin powder
  • 1/2 teaspoon Red chilli powder
  • 3 Green chillies chopped
  • to taste Salt
  • 1 tablespoon Fresh coriander leaves chopped

  1. Boil, cool, peel and cut potatoes into one inch sized cubes. Crush anardana seeds.
  2. Heat butter in a pan. When it starts smoking, add potatoes and fry till red and crisp. Add turmeric powder, coriander powder, cumin powder, red chilli powder, crushed anardana, chopped green chillies and salt to the fried potatoes. Mix well. Sprinkle chopped coriander leaves and serve hot.
