By Sanjeev Kapoor 01 Sep 2016 in Recipes Course New Update Main Ingredients Almonds, Cranberries Cuisine Fusion Course Snacks and Starters Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Non Veg Ingredients list for Almond Cranberry Muffins ¾ cup Almonds meal ½ cup Cranberries dried 1 cup Refined flour (maida) 1 cup Butter 1 cup Castor sugar (caster sugar) 4 Eggs ½ teaspoon Vanilla essence 1 teaspoon Baking powder a pinch Salt ¼ cup Almonds slivered Method Preheat oven to 180ºC. Cream together the butter and castor sugar in a bowl till light and fluffy. Add the eggs, one at a time and the vanilla essence and beat well. Sieve together the flour, baking powder and salt into the butter-sugar mixture and fold gently. Fold in the almond meal and cranberries. Scoop the mixture evenly into muffin moulds and sprinkle the slivered almonds on top. Put the moulds on a baking tray, place the tray in the preheated oven and bake for fifteen to twenty minutes. Remove from oven and demould. Serve warm.
