Ingredients list for Akuri

  • 4 Eggs
  • 2 teaspoons Oil
  • 1 medium Onion finely chopped
  • 1-2 Green chillies finely chopped
  • 1 teaspoon Fresh coriander leaves chopped, 1 tablespoon +
  • ¼ teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • ½ teaspoon Cumin powder
  • to taste Salt
  • 1 tablespoon Butter
  • 4 Bread toasts

Method

  1. Heat oil in a non-stick pan. Add onion and green chillies and sauté till onion turns golden.
  2. Add tomato and sauté for 1 minute. Add 1 tablespoon coriander leaves and sauté for 30 seconds.
  3. Add turmeric powder, chilli powder and cumin powder, mix well and sauté for 1 minute.
  4. Break eggs into a bowl, beat well and add to pan along with salt, Mix lightly for 1 minute. Add butter and remaining coriander leaves and mix well.
  5. Cut bread toasts into triangles.
  6. Garnish with a coriander sprig and serve hot with toast triangles.
