By Sanjeev Kapoor 09 Jun 2016 in Recipes Course New Update Advertisment Main Ingredients Raw mangoes, Mustard oil Cuisine Bengali Course Pickles, Jams and Chutneys Prep Time 6-10 minutes Cook time 21-25 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Aamer Tok 2-3 medium Raw mangoes peeled and cut into cubes 2-3 tablespoons Mustard oil 1 teaspoon Mustard seeds 3 Dried red chillies ¼ teaspoon Turmeric powder ½ cup Castor sugar (caster sugar) to taste Salt Paanch phoran 1 teaspoon Fennel seeds (saunf) 1 teaspoon black sesame seeds (kale til) 1 teaspoon Fenugreek seeds (methi dana) 1 teaspoon Cumin seeds 1 teaspoon Mustard seeds Method Heat mustard oil in a non-stick pan till it reaches the smoking point. Then cool it down to room temperature. Grind together the spices in paanchphoran into a coarse powder. Heat mustard oil again, add mustard seeds and let them splutter. Add red chillies, turmeric powder and saute for half a minute. Add raw mangoes, mix well and cook till mangoes turn soft and pulpy. Add castor sugar and salt, mix well. Add ½ cup water, mix well and cook for 5-10 minutes.
