Ingredients list for Watermelon Pachadi

  • 1 cup Water Melon Whites chopped
  • 1/2 cup Coconut Grated grated
  • to taste Salt
  • 1/4 teaspoon Turmeric powder
  • 1/4 teaspoon Cumin seeds
  • 1 tablespoon Sugar
  • 3 Green chillies chopped
  • 1/2 cup Yogurt
  • 2 teaspoons Oil
  • 1/4 teaspoon Mustard seeds
  • 1/4 teaspoon Fenugreek seeds
  • 2 Whole red chillies cut into two
  • for garnishing Coriander leaves

Method

  1. Heat 1 cup water in anon stick pan, add melon pieces, salt and turmeric powder. Cook for five minutes. Drain and set aside.
  2. Blend together coconut, cumin seeds, sugar, green chillies with two tablespoons water to a smooth paste.
  3. In a bowl add the melon; add yogurt and the ground paste. Mix well.
  4. In small non stick pan heat oil, add mustard seeds, fenugreek seeds, and red chillies, sauté for thirty seconds. Add to the above mixture.
  5. Garnish with chopped coriander leaves and serve cold.
