Ingredients list for Vegetable Pesto Rings

  • 7-8 Cauliflower florets, finely chopped
  • 3-4 Babycorn finely chopped
  • 1 medium Carrot peeled and finely chopped
  • 3-4 French beans stringed and finely chopped
  • 3-4 Potatoes boiled, peeled and mashed
  • 5-6 tablespoons Pesto sauce
  • for deep-frying Oil
  • 3-4 tablespoons Refined flour (maida)
  • to taste Salt
  • to taste Black pepper powder

Method

  1. Heat sufficient oil in a pan.
  2. Put cauliflower, babycorn, carrot and French beans in a bowl and mix. Add potatoes, refined flour, salt and pepper powder and mix well. Add pesto sauce and mix again.
  3. Divide the mixture into equal portions, flatten and make a dent in the centre. Deep-fry the rings in the hot oil till golden and crisp. Drain on absorbent paper.
  4. Serve hot.
