Ingredients list for Turkish Pizza

  • 2 cups + f Refined flour (maida)
  • 1½ teaspoon Fresh yeast
  • ½ teaspoon Castor sugar (caster sugar)
  • 2 Eggs
  • ½ cup Yogurt
  • to taste Salt
  • 1 white onion
  • 1 tbsp + f oil
  • 1 tablespoon Garlic finely chopped
  • 1 Green chilli
  • 1 cup Minced mutton
  • 1 Green capsicum
  • 1 Red capsicum
  • 1 teaspoon Red chilli powder
  • ½ teaspoon All spice powder
  • ¼ cup Tomato puree
  • 50 grams Mozzarella cheese

Method

  1. Mix yeast, sugar and 2 tbsps warm water in a bowl and set aside to froth.
  2. Put refined flour in a bowl, break one egg and add along with yogurt, activated yeast and salt and mix well. Add ¾ cup water and knead into medium-soft dough. Set aside to rise.
  3. Preheat oven to 180º C. Finely chop onion.
  4. Heat oil in a non-stick pan, add onion and garlic and sauté till lightly browned.
  5. Finely chop green chilli and add to the pan and sauté further for half a minute.
  6. Add minced mutton and mix well. Add ¼ cup water and mix well. Cover and cook for 2-3 minutes.
  7. Cut green and red capsicums into small pieces.
  8. Add capsicum pieces to the pan and mix well. Add salt and mix well. Cover and cook for 3-4 minutes.
  9. Add red chilli powder, all spice powder and tomato puree and mix well. Cover and cook till the mutton is fully cooked. Transfer into a bowl.
  10. Dust worktop with refined flour, place the dough on it and roll out into a thick oblong sheet.
  11. Grease a baking tray with oil and place oblong sheet on it.
  12. Break the remaining egg into a bowl and whisk well. Grate mozzarella cheese into another bowl.
  13. Spread mutton mixture on the oblong sheet, fold the edges inwards and join them at the ends. Top with grated mozzarella cheese. Brush the sides on the oblong sheet with whisked egg.
