Heat oil in a non-stick pan, add cumin seeds and bay leaves and sauté till fragrant. Add ginger and garlic and saute for a minute. Roughly chop green chillies, add to the pan and sauté for a minute. Add onions and sauté till light golden. Cut the ridge gourd into 1 inch cubes and add to the pan. Add coriander powder, turmeric powder, red chilli powder, garam masala powder, dried mango powder, salt and mutton mince and mix well. Cover and cook for 10-15 minutes or till the mince is fully cooked. Transfer into a serving bowl, garnish with a mint sprig and serve hot.
