Ingredients list for Tomato and Egg Chinese Style

  • 5-6 Medium tomatoes
  • 4 Eggs
  • 1 tablespoon Oil
  • 3 Spring onion bulbs
  • 2 Green chillies
  • 1/2 teaspoon Soy sauce
  • 1 tablespoon Sweet red chilli sauce
  • to taste Salt
  • 8-10 Fresh coriander sprigs
  • 4 teaspoons Cornflour slurry

Method

  1. Heat oil in a non-stick pan.
  2. Halve the tomatoes and further cut each half into four pieces and add to the pan.
  3. Slice spring onion bulbs.
  4. Break eggs in a bowl.
  5. Saute the tomatoes for 2-3 minutes and then drain into a bowl.
  6. Add sliced spring onion bulbs to the oil remaining in the pan and saute lightly.
  7. Beat eggs lightly and add to the pan.
  8. Slice green chillies diagonally and add to the pan, scramble the eggs on high heat.
  9. Add soy sauce and chilli sauce and mix well. Add tomatoes and salt and mix lightly. Drizzle a little water and cook.
  10. Finely chop coriander sprigs and add to the pan. Add cornflour slurry, mix well and cook for a minute. Serve hot.
