Put grated cheese in a bowl, add refined flour, baking soda, onions, spring onions, garlic, schezwan chutney and sufficient buttermilk and mix to make a dough. And salt and mix. Shape the mixture into quenelles with 2 teaspoons, slide into hot oil and deep-fry till golden and crisp. Drain on absorbent paper. Put a little red chilli sauce in a small plate.
