Ingredients list for Romesco Sauce

  • 1 kilogram Tomato
  • 120 grams Hazelnuts
  • 30 grams Garlic
  • 90 grams Hazelnuts
  • 90 grams Almonds
  • 2 White bread slices
  • 10 grams Paprika
  • 375 litres Red wine vinegar
  • 850 litres Extra virgin olive oil
  • to taste Salt

Method

  1. Cut the tomatoes and onions into halves.
  2. Roast the tomato, onion, almonds, hazelnuts, bread slices and garlic together at 200 degree for 30 minutes.
  3. Remove and blend with smoked Spanish paprika, red wine vinegar and extra virgin olive oil to smooth paste consistency. Season with salt.
