Short grain rice
Dried apricots chopped
Dried figs chopped
Pour milk into a deep pan, add rice and cook.
Heat a non-stick pan, add dried apricots, figs, prunes and 1½ cups water and mix. Add cinnamon and cook.
Add 3 tbsps sugar to milk-rice mixture and cook till rice is fully cooked and the mixture thick. Cool.
Put a scoop of kheer in martini glasses.
Add vanilla essence to the fruits and mix. Put the fruit compote over the kheer and serve.
