Raw Mango Pie This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 25 Apr 2016 in Recipes Course New Update Main Ingredients Refined flour (maida), Powdered sugar Cuisine Fusion Course Desserts Prep Time 2.30-3 hour Cook time 11-15 minutes Serve 4 Taste Sweet Level of Cooking Moderate Others Veg Ingredients list for Raw Mango Pie 2 cups + 4 + for dusting Refined flour (maida) ¾ cup Powdered sugar a pinch Salt 1 cup + 2 tablespoons Chilled butter chopped, FILLING 6 medium Raw mangoes peeled, deseeded and roughly chopped 1½ cups Sugar 1½ teaspoons Red chilli flakes 2 cups Vanilla sponge cake crumbled Method Preheat oven to 180°C. To make the crust, take the flour in a bowl. Add salt, powdered sugar and butter and mix till it resembles breadcrumbs. Add 50 ml of chilled water and mix well. Transfer on the worktop and knead to make a stiff dough. Wrap in a cling film and refrigerate for two to three hours. To make the filling, heat raw mangoes in a non-stick pan. Add sugar, mix and cook till the moisture evaporates. Add chilli flakes and mix well. Remove from heat and cool. Add the cake crumbs to mango mixture and mix well. Dust the worktop with some flour, place the dough and roll out to make a half cm thick sheet. Line the pie mould with the sheet and put the mango-cake mixture on top. Put the pie mould in preheated oven and bake for fifteen to twenty minutes. Remove from oven, slightly cool and demould.
