Boneless chicken breast
Pistachios blanched & crushed
Red chillies crushed
Onion cut into medium cubes
Red capsicum cut into medium cubes
Green capsicum cut into medium cubes
Yellow capsicum cut into medium cubes
Preheat oven to 200 °C/ 400 °F.Make crisscross slashes on the chicken breasts. Drizzle 1 tsp ponzu sauce on each breast along with salt, crushed red chillies.
Put the crushed pistachios over the chicken in a thick layer. Heat 2 tsps olive oil in a non-stick pan. Add onion, the three coloured capsicums, 1 tsp ponzu sauce, salt and crushed red chillies. Sauté for 1-2 minutes.
Put half the vegetables in an ovenproof dish. Place 1 chicken breast over them, drizzle 2 tsps olive oil over and cook in the preheated oven for 8-10 minutes or till done. Similarly cook the other chicken breast too. Serve hot.
