Ingredients list for Pineapple Pulao

  • 1 1/2 cups Basmati rice soaked
  • 3 slices Tinned pineapple
  • 6 tablespoons Castor sugar (caster sugar)
  • 2 inch sticks Cinnamon
  • 2-3 tablespoons Cashewnuts chopped
  • 2 tablespoons Raisins soaked and drained
  • 1/2 teaspoon Vanilla essence

Method

  1. Heat a deep non stick pan, add castor sugar and cook stirring continuously till it caramelizes.
  2. Cut pineapple slices into medium cubes and add to the pan and mix. Add cinnamon and mix and saute for 3-4 minutes.
  3. Add cashewnuts and mix. Add raisins and mix. Drain and add rice and mix well. Add 3 cups water and mix. Add vanilla essence and mix.
  4. Cover and cook on high heat for 8-10 minutes. Check if the rice is done. If it is not completely cooked, sprinkle a little water and cook till it is completely done. Serve hot.
