Peanut Butter Pie

This pie has cookies-butter mixture as the base, topped with peanut butter mixture and further topped with chocolate ganache. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Peanut Butter Pie

  • 1½ cups + tablespoons Peanut butter
  • 10-15 Dark chocolate biscuits
  • ¼ cup + 8 tablespoons Butter
  • 1 cup Powdered sugar
  • ½ cup Fresh cream
  • 1 cup Dark chocolate chopped
  • to sprinkle Mango chocolate chips
  • to sprinkle Orange chocolate chips

Method

  1. Take dark chocolate cookies in a plastic zip-lock bag, seal and gently beat them with a rolling pin to make a fine powder. Transfer into a bowl.
  2. Take ¼ cup butter in a microwave proof bowl and heat in the microwave for 30 seconds or till it melts. Add it to dark chocolate cookie powder and mix well.
  3. Line an aluminium tart mould with cookie-butter mixture. Refrigerate till set.
  4. Take 8 tablespoons butter, peanut-butter and powdered sugar in another bowl and whisk with an electric beater till creamy.
  5. Put the peanut butter mixture over the cookie base and level it out. Refrigerate till set. This is pie.
  6. To prepare ganache, heat cream in a non-stick pan and bring to boil. Add dark chocolate, mix and cook till it melts. Remove from heat and cool.
  7. Spread ganache on top of peanut butter layer and tap. Sprinkle mango chocolate chips and orange chocolate chips on top. Refrigerate till set.
  8. Demould, cut into wedges and serve.
