Believe it or not, it is the mainstay dish of all those who want a filling meal in a jiffy. Ingredients for Pasta Sofrito with Chicken Recipe

  • Pasta Penne, boiled 2 cups

  • Boneless chicken grilled and shredded 250 grams

  • Salt to taste

  • Crushed black peppercorns to taste

  • Parmesan cheese grated to sprinkle

  • Fresh parsley sprig for garnishing

  • Sofrito

  • Tomatoes quartered 3 medium

  • Red capsicum roughly chopped 1 medium

  • Spring onion 1

  • Garlic cloves 3

  • Fresh parsley ¼ cup

  • Olive oil ¼ cup

Method

Step 1

To make sofrito, finely chop together tomatoes, bell pepper, spring onion, garlic and parsley with olive oil in a food processor.

Step 2

Heat a non-stick pan. Add the chopped ingredients and sauté till the oil separates.

Step 3

Add chicken, pasta, salt and crushed peppercorns and mix well.

Step 4

Sprinkle parmesan cheese on top and serve hot garnished with parsley sprig.
