Heat oil in a non-stick pan. Add garlic and ginger and sauté for 30 seconds. Add cubed cottage cheese and sauté till lightly golden from all sides. Combine yellow Thai curry paste and coconut milk in a bowl and mix. Add chilli flakes and prepared curry paste to the pan and mix. Add salt, mix and cook for a minute. Add lemon juice and spring onion greens and mix well. Serve hot on a lined serving platter and garnished with some chopped spring onion greens.
