Ingredients list for Paneer Bruschetta with Tamarind Chutney

  • 1 cup Cottage cheese (paneer) crumbled
  • 1 Baguette cut into 1 inch thick slices
  • Tamarind chutney for topping
  • 1 cup Cherry tomatoes halved
  • 2 medium Onions chopped
  • 1 teaspoon Olive oil
  • 1 tablespoon Fresh coriander leaves chopped
  • to taste Salt

Method

  1. Heat a non-stick pan and toast the baguette slices. Remove from heat and set aside.
  2. Combine cherry tomatoes, onions, cottage cheese, olive oil, coriander leaves and salt in a bowl and refrigerate for twenty minutes.
  3. Top each toasted slice with generous amount of the tomato mixture. Top with tamarind chutney and serve immediately.
