Ingredients list for Orange Ambrosia

  • 4 Orange
  • 2 tablespoons Sponge Cake
  • Orange marmalade
  • 2 tablespoons Brown sugar
  • 6 inch round Sponge cake
  • as required Vanilla ice cream

Method

  1. Keep 4 stemmed glasses in a refrigerator to chill. Peel oranges and separate segments. Cook them in a non stick pan with brown sugar and orange juice.
  2. Cut the cake horizontally into 3 slices. Cut out roundels in 3 different sizes using round cookie cutters.
  3. Keep the smallest roundels at the base of the glasses, cover with some of the orange mixture along with some juice.
  4. Spread a layer of ice cream. Over this keep the medium sized cake roundels, cover with some of the orange mixture over this too and top it with a layer of ice cream.
  5. Place the biggest cake roundels on top, cover with some of the orange mixture. Chill in the refrigerator.
  6. While serving put a scoop of ice cream on the topmost cake roundel and top it with some orange marmalade and one orange segment. Serve immediately.
