Ingredients list for Mini Soya Cottage Pies

  • 100 grams Soya Granules soaked and squeezed
  • 8 Tartlet Cases
  • 1 tablespoon Oil
  • 5-6 cloves Garlic chopped
  • 1 medium Onion chopped
  • 1/2 cup Tomato puree
  • to taste White pepper powder
  • to taste Salt
  • 1/2 teaspoon Fresh thyme chopped
  • 3 tablespoons Green peas boiled
  • 1/2 teaspoon Fresh parsley chopped
  • to taste Black pepper powder
  • 2 tablespoons Butter
  • 2 medium Potatoes mashed
  • 2 tablespoons Cream
  • a pinch Nutmeg powder

Method

  1. Preheat oven on grill mode at 180 ºC. For filling, heat oil in a pan and sauté garlic and onion till soft.
  2. Add tomato puree, white pepper powder, salt and thyme.
  3. Add soya mince and green peas. Mix and cook for a minute.
  4. Reduce heat and cook uncovered until moisture evaporates.
  5. Add parsley and black pepper powder and stir. Remove from heat.
  6. Set aside. In another pan melt butter. Add mashed potatoes and cream and mix well Remove from heat and allow it cool to room temperature.
  7. Add salt, white pepper powder and nutmeg powder. Put the potato mixture into a piping bag with star nozzle .
  8. Arrange tartlet cases in a baking tray.
  9. Place a spoonful of soya mixture in each case and pipe it over with creamy mashed potatoes .
  10. Bake in a preheated oven under a hot grill until the tops are golden brown. Garnish with parsley sprig and serve hot.
