Lauki raita

This is a good way to use bottle gourds. Ensure that you squeeze out any excess water from the cooked bottle gourd. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Lauki raita

  • 250 grams Bottle gourd (lauki or doodhi)
  • 375 grams Yogurt (Natural low-fat) chilled
  • a pinch Salt
  • a pinch Red chilli powder
  • a pinch Roasted cumin powder

  1. Peel and grate the bottle gourd. Boil the grated bottle gourd with the salt for 5 minutes. Drain and allow to cool.
  2. Whisk the chilled yogurt and add the red chilli powder. Add the bottle gourd and mix well. Serve sprinkled with cumin powder.
