Jain Veg Frankie Few people can resist a Frankie – and this one deserves to be devoured in seconds. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 07 Jun 2016 in Recipes Course New Update Advertisment Main Ingredients Refined flour (maida), Whole wheat flour (atta) Cuisine Indian Course Snacks and Starters Prep Time 26-30 minutes Cook time 26-30 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Jain Veg Frankie ½ cup Refined flour (maida) ½ cup Whole wheat flour (atta) ¼ cup Yogurt to taste Salt 1 tablespoon Oil to knead the dough + 2-3 Green chillies chopped ¼ cup Green capsicum chopped ¼ cup Yellow capsicum chopped ¼ cup Red capsicum chopped 5-6 Babycorns chopped ¼ cup Purple cabbage chopped ¼ cup Cabbage chopped 1 medium Raw banana boiled and chopped 1 teaspoon Dried oregano 1 teaspoon Red chilli flakes 1 teaspoon Soy sauce 1 tablespoon Tomato ketchup ¼ cup Paneer (cottage cheese) chopped 1 teaspoon Frankie masala 4-5 Lettuce leaves shredded Method Put refined flour, whole wheat flour, yogurt and salt in a bowl and knead into a soft dough with water as required. Add a little oil and knead again. Let it rest for ten to fifteen minutes. Heat one tablespoon oil in a non-stick pan, add green chillies and sauté for half a minute. Add green capsicum, yellow capsicum, red capsicum and sauté for a minute. Add baby corns, mix again and cook for a minute. Add purple cabbage and cabbage and mix again. Add raw banana, salt, oregano, chilli flakes, soy sauce and tomato ketchup and mix well. Add the cottage cheese and mix again. Add the Frankie masala, mix well and set aside to cool. Divide the dough into equal portions and roll them into balls. Roll each ball into thin four to five inch diameter tortillas. Heat a non-stick tawa, and cook each tortilla,turning sides, for about thirty seconds on each side. Put each tortilla on direct flame and let it puff. Set aside on a plate. Keep each tortilla on worktop, sprinkle some Frankie masala on it, put some shredded lettuce over it, spread the vegetable mixture on it and roll the tortilla to make frankies. Heat the tawa again, put one teaspoon oil and place a Frankie on it. Cook, turning sides, till golden all around. Similarly cook the remaining frankies.
