By Sanjeev Kapoor 20 Feb 2017 in Recipes Course New Update Advertisment Main Ingredients Rice, mexican paste Cuisine Fusion Course Rice Prep Time 6-10 minutes Cook time 16-20 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Jain Mexican Rice 1½ cups Rice soaked 2 tablespoons mexican paste 1 tablespoon Olive oil ½ cup Cabbage shredded 1 teaspoon Red chilli flakes 3 cups Vegetable stock to taste Salt ½ Corn kernels boiled ½ medium Green capsicum Advertisment Method Heat oil in a non-stick pan. Add cabbage and sauté till golden. Drain rice and add to the pan and mix well. Add Mexican paste and chilli flakes and mix well. Add 3 cups vegetable stock and mix well. Add salt, mix, cover and cook till rice is half done. Add corn kernels and capsicum, mix, cover and cook till rice is fully done. Serve hot.
